Coconut Cake Revival and Other Birthday Wishes

This has been a great weekend. It was so nice to spend time with Winemonkey, Lisa and Lambert. Not including our super special Saturday out at the winery.

Coconut Cake

Here is the magnificent coconut cake I made. It was delicious. I don’t know why baking and I get along, but I am sure glad that we do!

Supposed to be about Cake

This post should have pictures of me baking a beautiful coconut cake. Unfortunately I didn’t get to it last night and today, when I thought I could finally settle in for a little baking before dinner, I noticed that I only had ONE round cake pan.

Having two kitchens 75 miles apart is hard sometimes.

Dessert Desert

Every night this week I have wanted to make dessert. And every night this week I have run out of time. I have been craving biscotti like it is going out of style.

I have been making progress on my coconut birthday cake. I am going to try and bake the actual cake tonight. The past two nights I have made homemade coconut extract, homemade coconut milk and coconut cream. So tonight is the cake and maybe the icing although assembly won’t happn until Friday night.

Am I crazy? I still want to try and squeeze the biscotti in. I am sure a few $3 margaritas won’t affect my drive. Ha!

What do you think I should talk about? How I am going to lose 10% of my pay every month for the next 16 months? How we have 9 days to get an inconceivable amount of work done?

Should I talk about the quilts I am repairing/making? Or the scarves I am going to put up on Etsy?

Should I tell you how excited I am that I am going to Santa Rosa this weekend? And about all of the great things I am going to? Or how much I miss my boyfriend and puppy?

I think what I want to say is thank you. If you are out there in the internets and you read what I have to say, thank you. I have spent about 33% of those 1,000 posts complaining about my dissertation. You helped me through it. I have spent 10% of the time talking about family. You laughed with me. I spent 15% of the time talking about stupid mistakes I had made. You laughed at me. I spent 20% of the time talking about how I spend my time. You yawned through it with me. I have spent 22% of the time talking about incredibly random thoughts. You tried following along with me.

(For those of you who like things in graph form, be prepared for a statistical blow out next week.)

Some of you are family, some of you are friends, and some of you are nothing but a whirlwind of electrons finding me in the nothingness. I am glad you are all out there.
